
A quick and easy breakfast with leftover meatloaf an 2 eggs.
The Meatloaf has about 50% grass-fed ground beef and the rest is made up of mushrooms, cauliflower, parsley, and spices. Yeah, this is not a veggie burger, there is no soy or corn used in this meatloaf.
Eggs are pasture raised.
Started off by heating the cast-iron skillet (10 inches) and with the proper heat apply about a tablespoon of ghee.
Make sure the pan is thoroughly coated then add a good size slice of meatloaf.
After flipping the meatloaf add the eggs with 2 tablespoons of water. This will create steam to cook the top of the eggs and quickly cover them with a lid.
So simple you can start this before your first cup of coffee.
